INGREDIENTS

  • 1 1/2 cups oatmeal
  • 1 cup applesauce
  • 1 1/4 cups flour
  • 2/3 cup skim milk
  • 1/2 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 2 tablespoon cooking oil
  • 3/4 teaspoon baking soda
  • 1 egg

DIRECTIONS

  1. Combine oatmeal, flour, cinnamon, baking powder, and baking soda.
  2. Add applesauce, milk, sugar and egg; mix just until the dry ingredients are moistened.
  3. In an oiled muffin tin, fill muffin cups 2/3 full.
  4. Bake at 400 degrees for 20 minutes or until deep golden brown.
  5. Makes 18 muffins.
