This amazing black bean salsa dip pairs wonderfully with a variety of southwestern dishes and is a real crowd pleaser!
INGREDIENTS
- 2 (15-oz) cans Black beans, rinsed and drained
- 2 (15-oz) cans Whole kernel corn, rinsed and drained
- 2 Large tomatoes, seeded and diced
- 1 Small onion, diced
- 1/4 cup Chopped fresh cilantro leaves
- 2 Tbsp Lime juice
- 1 Tbsp Red wine vinegar
- Dash of pepper
- Optional: Add avocado or any color bell pepper for an extra twist!
DIRECTIONS
- Mix all ingredients thoroughly in a large bowl.
- Cover and chill overnight.
- Taste and add pepper or more lime juice as needed
- Serve with tortilla chips or with grilled chicken as a meal!
