This comforting chicken tortellini soup adds a unique and delicious touch to the classic chicken soup!

INGREDIENTS

  • 8 cups Low sodium chicken broth
  • 1 can (14.5 oz) Diced tomatoes
  • 1 10-oz pkg Frozen chopped spinach
  • 1/4 cup Parmesan cheese, grated
  • 1/2 tsp Salt (optional)
  • 1/2 tsp Pepper
  • 1 pkg (9 oz) Fresh cheese tortellini
  • 2 1/2 cups Cooked diced chicken

DIRECTIONS

  1. In a dutch oven over medium heat, combine stock, tomatoes, spinach, cheese, salt and pepper.
  2. Bring to a boil.
  3. Reduce heat, simmer 10 minutes Add pasta and chicken.
  4. Bring to a boil, reduce heat and simmer covered until heated through, about 5 minutes.
  5. NOTE: Additional frozen vegetables (cook’s choice as to what kind) may be added in step 1 if desired.
