This comforting chicken tortellini soup adds a unique and delicious touch to the classic chicken soup!
INGREDIENTS
- 8 cups Low sodium chicken broth
- 1 can (14.5 oz) Diced tomatoes
- 1 10-oz pkg Frozen chopped spinach
- 1/4 cup Parmesan cheese, grated
- 1/2 tsp Salt (optional)
- 1/2 tsp Pepper
- 1 pkg (9 oz) Fresh cheese tortellini
- 2 1/2 cups Cooked diced chicken
DIRECTIONS
- In a dutch oven over medium heat, combine stock, tomatoes, spinach, cheese, salt and pepper.
- Bring to a boil.
- Reduce heat, simmer 10 minutes Add pasta and chicken.
- Bring to a boil, reduce heat and simmer covered until heated through, about 5 minutes.
- NOTE: Additional frozen vegetables (cook’s choice as to what kind) may be added in step 1 if desired.
