This light and flavorful Italian summer soup is the perfect meal to stay healthy and feed many happy family members. Great for parties!

INGREDIENTS

  • 1 cup Chopped red onions
  • 6 Finely chopped garlic cloves
  • 2 Tbsp Olive oil
  • 2 Tbsp Italian seasoning
  • 2 cups Chopped fresh tomatoes
  • 1 cup Chopped green bell pepper
  • 1 cup Chopped zucchini
  • 1 can (15 oz) No added salt black beans
  • 1 cup Frozen corn kernels
  • 1/8 tsp Cayenne pepper
  • 1 cup Water
  • 1 tsp Salt and pepper to taste

DIRECTIONS

  1. Clean and chop red onion, garlic, tomatoes, bell pepper, and zucchini.
  2. Place 3-quart pot on medium heat.
  3. Add olive oil to pot. Add chopped onion, garlic, and Italian seasoning and cook until onion is soft.
  4. Add remaining ingredients.
  5. Bring to boil, reduce to simmer for 20 minutes.
  6. Serve alone or over rice.
