This light and flavorful Italian summer soup is the perfect meal to stay healthy and feed many happy family members. Great for parties!
INGREDIENTS
- 1 cup Chopped red onions
- 6 Finely chopped garlic cloves
- 2 Tbsp Olive oil
- 2 Tbsp Italian seasoning
- 2 cups Chopped fresh tomatoes
- 1 cup Chopped green bell pepper
- 1 cup Chopped zucchini
- 1 can (15 oz) No added salt black beans
- 1 cup Frozen corn kernels
- 1/8 tsp Cayenne pepper
- 1 cup Water
- 1 tsp Salt and pepper to taste
DIRECTIONS
- Clean and chop red onion, garlic, tomatoes, bell pepper, and zucchini.
- Place 3-quart pot on medium heat.
- Add olive oil to pot. Add chopped onion, garlic, and Italian seasoning and cook until onion is soft.
- Add remaining ingredients.
- Bring to boil, reduce to simmer for 20 minutes.
- Serve alone or over rice.
