Lentil Soup
Lentils are a staple in the Mediterranean. This lentil soup is a simple, but delicious favorite. The lentils will help boost your metabolism and add protein to your diet!
INGREDIENTS FOR LENTIL SOUP
- 2 cups dried lentils
- 1 28-ounce can low-sodium tomatoes
- 4 cups cold water
- 1/2 teaspoon salt
- 2 garlic cloves, crushed
- 1/4 teaspoon pepper
- 2 bay leaves
- 1 medium onion, diced
DIRECTIONS
- Rinse lentils.
- Place all ingredients in a saucepan, and bring to a boil.
- Cover and simmer over a low heat for 2 to 2 1/2 hours, or until tender.
- Add water as desired.
- Makes 6 servings. (Freezes well.)
