Lentils are a staple in the Mediterranean. This lentil soup is a simple, but delicious favorite. The lentils will help boost your metabolism and add protein to your diet!

INGREDIENTS FOR LENTIL SOUP

DIRECTIONS

  1. Rinse lentils.
  2. Place all ingredients in a saucepan, and bring to a boil.
  3. Cover and simmer over a low heat for 2 to 2 1/2 hours, or until tender.
  4. Add water as desired.
  5. Makes 6 servings. (Freezes well.)
