Scalloped Corn
This scalloped corn recipe allows you to add something flavorful to a staple you already love. A very easy, but delicious recipe that can accompany any diabetic-friendly dinner.
INGREDIENTS FOR SCALLOPED CORN
- 2-16 oz cans of whole kernel corn
- 2 egg whites
- 1 teaspoon dried minced onion
- 2 tablespoons flour
- 1 tablespoon sugar
- 1/2 green pepper, chopped
- 1/4 cup milk
- 4 oz shredded cheddar cheese
- 1 egg, beaten
DIRECTIONS
- Drain corn.
- Place corn, flour and sugar in an oiled baking dish and mix.
- Add milk, egg, egg whites, onion and green pepper. Mix well.
- Sprinkle cheddar cheese on top.
- Bake in oven at 400 degrees for 35 to 40 minutes, or until set.
- Makes 8 servings.
