Turkey Stroganoff

This turkey stroganoff recipe is the perfect way to have a nutritious and healthy meal that you and your family will love! It updates a classic with turkey and leans into the mushrooms and onions. Add the juice of lemon if you like it extra tart.

DIRECTIONS

  1. Cut the cooked turkey into narrow strips and set aside.
  2. Melt 1 tablespoon of the margarine in a large skillet. Add the sliced mushrooms and onion; cook until tender and lightly browned.
  3. Remove the mushrooms and onions and put them in a bowl. Do not wash the pan. Melt the remaining 1 tablespoon of margarine in the pan, add flour and stir until the flour is slightly browned.
  4. Add hot broth to the flour mixture, stirring constantly to form a smooth sauce.
  5. Add the tomato paste, Worcestershire sauce and sherry, stirring constantly. Simmer the sauce for 10 minutes.
  6. Add the turkey, mushrooms, and onion to the pan and simmer for an additional 10 minutes.
  7. Add the sour cream and mix thoroughly.
  8. Serve immediately over noodles.
  9. Makes 8 (3/4 cup) servings.
